Jerk Chicken

Ingredients

  • Chicken quarters
  • 2 Tbsp Ginger
  • 4 Cloves of Garlic
  • 2 Habanero Peppers
  • 2 Tbsp Fresh Thyme
  • 2 Tbsp Allspice
  • 1 Tbsp Nutmeg
  • 2 Tsb Cinnamon 
  • 2 Tbsp Black Pepper
  • 2 Tbsp Salt
  • ¼ Yellow Onion
  • 1 Bunch Scallions
  • 1 Cup Vegetable Oil
  • 1 Cup Soy Sauce

Directions

  1. Blend together all of the marinade ingredients. Once smooth, add it to a bowl or a bag with the chicken and marinate for 24 hours in the refrigerator.
  2. After 24 hours, set at room temperature and prepare smoker to 275 degrees. If you have pimento wood available, use that for smoking. If not any smoking wood will work. Place chicken skin side up on the smoker and smoke for about 1 hour, flipping halfway through.
  3.  We are looking to finish these at 170 degrees Fahrenheit, so once they reach 160 internal, crank the heat up to 500 degrees to help crispen up the skin. Once the internal hits 170, remove and let rest for 15 minutes, and enjoy!
