Ingredients
Dry Ingredients
- 1 ½ cups all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- ½ tsp salt
Wet Ingredients
- 1 ¼ cups milk
- 1 egg
- 3 tbsp melted butter
- 1 tbsp bourbon
- 1 tsp vanilla extract
Add-Ins
- 1 cup mixed berries (blueberries, raspberries, or strawberries)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, mix the milk, egg, melted butter , and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over mix.
- Heat a lightly greased skillet or griddle over medium heat.
- Pour about ¼ cup batter for each pancake onto the skillet.
- Cook until bubbles form on top and edges begin to set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden brown.
- While the pancakes are cooking, add butter to a different skillet over medium heat. Add in blueberries, 1 tbsp of sugar, and a shot of bourbon. Carefully light the bourbon on fire with a lighter and flambe until the flames are extinguished. Simmer for 2-3 minutes and pour over the pancakes. Use extreme caution when flambeing the alcohol and do not do this if you are unfamiliar with the technique!
- Serve warm with maple syrup, extra berries, and butter.
