Bourbon Berry Pancakes

Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt

Wet Ingredients

  • 1 ¼ cups milk
  • 1 egg
  • 3 tbsp melted butter
  • 1 tbsp bourbon
  • 1 tsp vanilla extract

Add-Ins

  • 1 cup mixed berries (blueberries, raspberries, or strawberries)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix the milk, egg, melted butter , and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not over mix.
  4. Heat a lightly greased skillet or griddle over medium heat.
  5. Pour about ¼ cup batter for each pancake onto the skillet.
  6. Cook until bubbles form on top and edges begin to set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden brown.
  7. While the pancakes are cooking, add butter to a different skillet over medium heat. Add in blueberries, 1 tbsp of sugar, and a shot of bourbon. Carefully light the bourbon on fire with a lighter and flambe until the flames are extinguished. Simmer for 2-3 minutes and pour over the pancakes. Use extreme caution when flambeing the alcohol and do not do this if you are unfamiliar with the technique! 
  8. Serve warm with maple syrup, extra berries, and butter.
